I’m guessing it’s the herbs as I tasted everything else and the grape seed oil seems tasteless It’s delicious anyway and I’ll probably use it on fish with some sweet roasted tomatoes.
You inspired me to make a green sauce with leftover Basil, a few leaves of spinach and a whack of tarragon. I used white wine vinegar and California evoo and 2 garlic cloves and some pine nuts. I found it a bit bitter - any suggestions?
Hmmm... the likely culprits are the herbs, the pine nuts, or the oil. If the herbs are a little bitter on their own that would be why. Same with the pine nuts. The other possibility is the oil - some oils (particularly the pricier ones) have a lot of compounds that break down if processed too long. A bit of sugar or a little more vinegar might balance it out.
