What grocery do you pick up those pork shoulders? I've never seen them around, at least not here in Windsor. I usually get mine from a small independent here, MR Meats. Usually the best price, but they run around 20 to 25. Pour the fat out? Heaven forbid! I use it all for making a BBQ sauce when I do a pulled pork. Nothing but flavour. ;)
Hi Paul: I get these at No Frills. They go on sale once in a while and sometimes get marked down even beyond the sale price, so I toss a few in the freezer. You can totally keep the fat, but this produces a lot and it's often more than I can use. But if you can't use it at least dispose of it without f*cking up your plumbing or adding to the sewer fatbergs!
Thanks, that explains it. We've only got 1 No Frills and it's on the opposite side of the city. I'll have to keep an eye out. Worth it for the crispy skin.
